Buttermilk Streusel Coffee Cake

My kids call this coffee cake, I grew up calling it cowboy cake, and the recipe calls it Streusel-Filled Buttermilk Coffee Cake. Whatever you call it, this is a wonderful addition to any breakfast. Pair it with fresh fruit, yogurt or our homemade applesauce, and it makes a wonderful healthy breakfast. If your mornings are as busy as mine, then do what we do and make it the night before. In the morning, just pop it in the oven and bake!

Buttermilk Streusel Coffee Cake

  • Batter:
  • 3 ½ c flour
  • 1 ½ c sugar
  • 2 Tbsp baking powder
  • 1 tsp salt
  • ½ c butter, softened
  • 1 ½ c buttermilk
  • 2 egg
  • Filling & Topping:
  • 1⅓ c packed brown sugar
  • 2 Tbsp cinnamon
  • 6 Tbsp butter, chilled
  • ⅔ c chopped nuts (optional)
  1. For batter, in large bowl combine dry ingredients. Add butter, buttermilk and egg. Beat for 30 seconds.
  2. In small bowl combine sugar and cinnamon. Cut butter into sugar mixture until you have fine crumbles. Do not overwork the butter as it will get hot and melt.
  3. Spread half the batter in a 9x13 pan. Sprinkle half the filling on top of the batter. Spoon in the remaining batter and top with the rest of the filling.
  4. Bake 40 to 45 minutes at 350 degrees.
