Pumpkin Squares

This has always been our favorite recipe. It is one of the first we tried to make gluten free. It is moist and delicious, and always turns out perfectly. 

Pumpkin Squares

Ingredients
  • 4 eggs
  • 1⅔ c sugar
  • 1 c oil
  • 2 heaping cups pumpkin
  • 2 c flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
Instructions
  1. Mix all ingredients well. Pour into ungreased pan with sides. Bake at 350 degrees for 25 minutes.
  2. Frosting
  3. oz cream cheese
  4. stick butter, softened
  5. ¼ c powdered sugar
  6. tsp vanilla
  7. Mix together and spread evenly over cooled squares.
