Gluten-Free Basic Muffin Mix
½ c butter or margarine
1 c brown sugar
1 egg
2 c Grandpa’s Kitchen Flour Blend
¼ tsp salt
1 c milk
1 tsp vanilla
Cream butter and sugar; mix in egg. Lightly mix dry ingredients
together and then add alternately with mil until combined. Mix
in vanilla.
Spoon 2/3 full into greased or lined muffin tins. Bake at 350˚F for
12 to 15 minutes or until golden brown (will sink in the middle if
under baked)
Can be frosted and turned into cupcakes. Nuts or dried fruit can
be added.
