Berry Oatmeal Bake

Getting my children to eat a healthy breakfast is always a struggle, especially when it comes to oatmeal.  I love it, and could eat it almost every day, but I have two children who suddenly have decided they don’t.  So, I am always on the lookout for a new way to cook it that satisfies everyone. I hope your family enjoys Berry Oatmeal Bake as much as mine does!

Ingredients
  • Oatmeal
  • 2 tsp butter
  • 1⅔ c milk
  • 1 ¼ c old fashioned rolled oats
  • 1 large egg
  • 3 Tbsp light brown sugar
  • 1 tsp vanilla
  • Kosher salt
  • ¼ tsp pure almond extract
  • Topping
  • ⅓ c slice almonds
  • ⅛ tsp ground cinnamon
  • ⅓ c old fashioned rolled oats
  • Kosher salt
  • 2 Tbsp brown sugar
  • 12 oz frozen mixed berries, thawed
  • 1 Tbsp flour
  • Yogurt or milk for serving
Instructions
  1. Preheat oven to 350 degrees. Grease 2 quart baking dish or 8 inch square pan.
  2. For the oatmeal: Stir together the oats, sugar, and ⅛ tsp salt in large bowl. Whisk together milk, egg, vanilla, and almond extract in a medium bowl. Pour the milk mixture into the oat mixture and stir well to combine.
  3. For the topping: Stir together the almonds, oats, sugar, butter, flour, cinnamon and ⅛ tsp salt until combined.
  4. To assemble: Pour the oatmeal into the prepared baking dish. Arrange the berries (including any juices) over the oatmeal. Sprinkle with the topping. Bake until lightly browned and just set, about 50 minutes. Serve warm with yogurt or milk
