Double Chocolate Waffles

My family loves waffles so I am always looking for new recipes. This is one of our favorites; if I left it up to my son we’d have them every morning for breakfast. These are great with butter and syrup, but our favorite way to eat them it with ice cream and strawberries on those nights I don’t want to cook. It may not be healthy, but it is delicious!

Double Chocolate Waffles
  • 1 ¼ c GF flour
  • 3 Tbsp unsweetened cocoa powder
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ c sugar
  • 1 large egg
  • 1 c buttermilk
  • ½ tsp vinegar
  • ¼ c oil
  • ½ c chocolate chips
  • ½ tsp vanilla
  • Additional milk if necessary
  1. In a large bowl whisk together flour, sugar, salt, and baking powder. Add egg, oil and buttermilk, and mix until smooth. Add cocoa and chocolate chips. Add vanilla, baking soda, and vinegar, in that order, and beat until well mixed. Add additional milk to desired consistency. Grease waffle iron well. This is great with ice cream and strawberries for dessert or a fun dinner.
