Orange Craisin Muffins

I love muffins, but I especially like orange muffins with craisins, there is just something about a warm orange muffin with a class of cold milk. I know you will love it too!!

Orange Craisin Muffins

  • 2 ½ c Grandpa’s Kitchen flour blend
  • 1 ½ tsp baking powder
  • ¾ tsp salt
  • ½ tsp baking soda
  • 1 ½ c sugar
  • ½ c melted butter
  • 2 large eggs
  • ½ tsp vanilla extract
  • 1 c sour cream
  • 1 orange, zest the skin and add to the batter then juice it and add the juice (the zest is much more powerful, but the orange juice adds flavor)
  • 1 c craisins
  1. In a medium bowl, whisk flour, baking powder, salt and baking soda. In a large bowl whisk butter, sugar, sour cream, eggs and vanilla until smooth. Mix in dry ingredients until moistened. If batter is too thick add a little extra milk. Fill muffin cups and bake at 350 degrees for 15 minutes.
  2. Note: do not use store bought orange zest, it does not add any flavor and is a waste of money
