Orange Craisin Muffins

These are one of my favorite muffins. With a light orange flavor and sweet craisins, they are sure to please any muffin lover. Just make sure you use fresh orange peel instead of dried orange zest, the fresh peel adds a lot more flavor.

  • 2 ½ c Grandpa’s Kitchen flour blend
  • 1 ½ tsp baking powder
  • ¾ tsp salt
  • ½ tsp baking soda
  • ½ c melted butter
  • 1 ½ c sugar
  • 1 c sour cream
  • 2 large eggs
  • ½ tsp vanilla extract
  • 1 orange, zest the skin and add to the batter, then juice it and add the juice (the zest is much more powerful, but the orange juice adds flavor)
  • 1 c craisins
  1. In a medium bowl, whisk flour, baking powder, salt and baking soda. In a large bowl whisk butter, sugar, sour cream, eggs and vanilla until smooth. Mix in dry ingredients until moistened. If batter is too thick add a little extra milk. Fill muffin cups and bake at 350 degrees for 15 minutes.
