Peanut Butter Oatmeal Rounds

If you love peanut butter cookies as much as I do, you have to try this recipe. My sister sent it to me once because she thought it would make a great gluten-free cookie, and she was right! With the peanut butter and oatmeal, these cookies are moist and delicious, the perfect snack on a cold, winter day.

I usually make a double batch and freeze the extra cookie dough in round dough balls, this way I can quickly pull a few out of the freezer and bake them up whenever I’m craving a treat. However, be careful, at my house the dough balls seem to disappear overnight as my husband and kids eat them straight out of the freezer when I am not looking. Baked or raw, these make a great treat everyone will love.

  • ¾ c butter
  • 2 eggs
  • 1 c sugar
  • ½ c brown sugar
  • ½ c peanut butter
  • 1 tsp vanilla
  • 1⅓ c GF flour blend
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 c oatmeal
  • 1 c chocolate chips
  1. Mix all ingredients together. You should cream butters and eggs then add sugar and other ingredients.
  2. Bake at 375 degrees for 10 minutes (if dough is frozen, if not, 8 minutes is usually enough).
