Tator Tot Breakfast Casserole

Recently my husband asked me about making a Tator Tot Breakfast casserole. I’ve never nade one, but to please him I did some research and bought the necessary ingredients. The result was delicious, and the recipe has become one of our family favorites!

Tator Tot Breakfast Casserole

  • 1 lb ground cooked sausage or bacon
  • 1 pkg tator tots
  • 2 c shredded Cheddar cheese
  • 2 cloves garlic
  • 2 Tbsp freshly chopped chives
  • 8 large eggs
  • 2 c milk
  • kosher salt
  1. Preheat oven to 350 degrees F. In a large skillet over medium heat, cook bacon until crispy, 8 to 10 minutes. Drain half the fat.
  2. To skillet add frozen tater tots, cooked bacon, cheddar, garlic, and chives and toss until combined.
  3. In a large bowl, whisk together eggs and milk and pour over skillet. Season generously with salt and pepper.
  4. Bake until eggs are set and tater tots golden, 45 minutes.
  5. Let sit 10 minutes, then slice and serve.
I cooked my casserole in a 9x13 pan instead of baking it in a large frying pan. Also, I added more eggs and more cheese to my tastes. The recipe is very forgiving. Just make sure you bake it until it is done in the middle.
